Our Blanc de Blancs is a classic method sparkling wine made from 100% Catarratto, the most emblematic white grape variety of Sicily.
Our journey with traditional method sparkling wine began in 2020, when we acquired a high-altitude vineyard on Mount Alcamo. This site, shaped by strong temperature variations and calcareous soils, immediately revealed itself as an ideal place to preserve acidity and finesse.
Once overlooked, these old Catarratto vines have gradually regained their role in this vineyard.
Today they give grapes with natural tension and clarity, well suited to long ageing on the lees and to a sparkling wine that stays true to the character of the variety.
Blanc de Blancs is our most vertical reading of Catarratto: a wine driven by place, patience and restraint, where the classic method becomes a tool to reveal, not to transform.
✦ The vineyard
The grapes come from our hillside vineyard at around 650 metres above sea level, nestled among pine and oak woods.
Here, the marl-calcareous soils reflect light and preserve freshness, allowing the fruit to ripen slowly and fully, with tension and aromatic precision.
Harvest is carried out in the first week of September, when the grapes reach the optimal balance between freshness, acidity, and varietal intensity.

Vinification follows our natural philosophy: minimal intervention, spontaneous fermentation and respect for purity.
For Blanc de Blancs, the process continues with:
Secondary fermentation in bottle (Metodo Classico)
Ageing on the lees for over 20 months
Brut Nature / zero dosage to preserve energy, tension and terroir expression.
✦ Tasting
The resulting sparkling wine is lively and refined.
Its perlage is fine and persistent, with a nose of fresh citrus, subtle herbal notes and elegant mineral undertones.
On the palate it shows:
vibrant acidity
saline freshness
a tactile, harmonious texture
All carried on a frame of persistent bubbles that lift the fruit and lengthen the finish.

THE VARIETY: CATARRATTO
CATARRATTO
The variety is grown all over Sicily, though concentrated in three provinces: Trapani, Palermo, and Agrigento. Traditionally, Catarratto wine was vinified as cheap bulk wine, usually made into sweet goop.
With the coming of modern winemaking to Italy, some producers have turned to producing good-quality wine from the variety, with success.
A well-made Catarratto has freshness and minerality, a good body, and citrus and herbal flavors. It may also exhibit slightly nut-like tastes. In some cases, the makers have applied some oak-barrel aging as well, which seems to work satisfactorily.
