Catarratto is our still white wine from the Mount of Alcamo in Sicily, made from 100% Catarratto grapes grown at high altitude.
✦ The wine
Driven by a persistent curiosity and by the desire to listen all the way through to what Mount Alcamo has to say, we felt it was time to take one step further.
Over the years, Catarratto has been a central part of our work. We explored its most vertical expressions, from sparkling wines to long skin-contact macerations, pushing the grape towards tension, structure and depth. Yet something was still missing.
We felt the need for a still white wine capable of expressing the same sense of freshness and finesse that Catarratto can naturally achieve here, when it grows on its most suited soils and is handled with restraint.
This wine is the result of that search.
Catarratto is born from our highest and most balanced parcels on Mount Alcamo, where altitude, exposure and calcareous soils allow the grape to ripen slowly while preserving acidity and clarity.
Vinified with a gentle, non-intrusive approach, it aims to be precise rather than expressive, transparent rather than demonstrative, a wine that speaks quietly, but with definition.
This is our purest interpretation of Catarratto: a still white shaped by place, patience and the willingness to listen, rather than to impose.
✦ The vineyard
The grapes come from the sister parcel of our Blanc de Blancs, on the Mount of Alcamo, at around 650 metres above sea level.
A luminous hillside where white marl surfaces almost bare, a soil that reflects light, lightens the ground underfoot and guides the grapes towards a slow, natural ripening.
Harvest takes place shortly after the grapes for the sparkling wine, when the fruit gains a little more breadth without losing tension.

Vinification is essential and straightforward, with no shortcuts:
spontaneous fermentation
ageing in cement
A deliberate choice, allowing the soil to speak without interference.

The result is a white wine that stands out for its clarity and drinkability.
On the nose, citrus and white flowers emerge, with a bright, clean edge.
The palate is slender and incisive, textured without weight, supported by a saline backbone that carries the finish through.
A straight, elegant line, with a mineral echo that returns again and again, recalling the geological origin from which everything begins.

With this wine, we close a circle we have been pursuing for a long time.

THE VARIETY: CATARRATTO
CATARRATTO
The variety is grown all over Sicily, though concentrated in three provinces: Trapani, Palermo, and Agrigento. Traditionally, Catarratto wine was vinified as cheap bulk wine, usually made into sweet goop.
With the coming of modern winemaking to Italy, some producers have turned to producing good-quality wine from the variety, with success.
A well-made Catarratto has freshness and minerality, a good body, and citrus and herbal flavors. It may also exhibit slightly nut-like tastes. In some cases, the makers have applied some oak-barrel aging as well, which seems to work satisfactorily.
